Elizabeth Colavito Siu

Associate Professor of Practice and Director the Masters Program

Dr. Siu is a Registered Dietitian who holds a PhD in Public Health from the University of Texas School of Public Health and an MS in Human Nutrition and Foods from Virginia Tech. Prior to her current position, she served as the nutrition analyst on projects at the Massachusetts Department of Public Health, University of Texas Human Nutrition Center, and Simmons University Nutrition Department. She has also served as project manager and program evaluator for a five-year community nutrition intervention for US-Mexico border residents. Her recent research projects have involved maternal-child nutrition issues among low-income women and their children in the Massachusetts WIC program.
